In downtown Waterloo, a 1927 bread bakery becomes a 20-barrel production space with a lively beer hall, kitchen, and outdoor garden. Large former loading bays are opened for light and views, tying the street to the taproom while keeping the brewing floor in clear sight. Brick, steel, and warm wood define the room's character; seating scales from family tables to long communal runs so events and everyday service share the same stage.

Resourcefulness is part of the aesthetic—and the sustainability story. Original equipment is repurposed in unexpected ways (think conveyor hardware and oven components given second lives), and bike-friendly access encourages low-carbon arrivals. The project earned LEED Gold (2017), pairing efficient systems with durable materials to turn a once-quiet block into an everyday destination.
